Pumpkin Cupcakes with Cream Cheese Frosting

24 cupcakes

Cupcakes:
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups flour
  • 1 Tbsp. pumpkin pie spice
  • 2 tsp. baking soda
  • 1 1/2 cups canned pumpkin
Method:  Oven 350 degrees F.
  1. In the large bowl of an electric mixer, combine sugar and oil; add eggs and continue beating.
  2. Add the next 4 ingredients and mix well.
  3. Pour batter into cupcake pan lined with cupcake papers.

Bake at 350 degrees for 25 to 30 minutes.  Let cool completely before frosting.

Frosting:
  • 8 ounces cream cheese, softened
  • 3 Tbsp. butter, softened
  • 2 tsp. vanilla
  • 2 1/2 – 3 cups sifted confectioners’ sugar
Method:
  1. In a bowl, blend cream cheese and butter.
  2. Add vanilla and sugar and mix well.
  3. Frost cooled cupcakes.
