Roasted Broccoli with Parmesan

Broccoli, tossed in olive oil, lemon juice and salt, roasted and served with parmesan cheese and lots of black pepper.

  • Cook time: 20 minutes
  • Yield: Serves 3-4 as a side dish

The measurements are just a guideline. Add more or less olive oil, lemon juice, salt, pepper, or cheese to taste.

INGREDIENTS

  • 1 1/2 pounds (680g) broccoli, cut into florets of even size
  • 3-4 Tbsp olive oil
  • Juice from half a lemon, about 1 Tbsp
  • Kosher salt
  • 2-3 garlic cloves, minced
  • Freshly ground black pepper
  • 1/4 cup grated Parmesan cheese, or to taste

METHOD

1 Preheat oven: Preheat oven to 425°F (220°C).

2 Toss broccoli and garlic with olive oil, lemon juice, salt: In a large bowl toss the broccoli florets and minced garlic with olive oil and lemon juice until lightly coated. Sprinkle salt over the broccoli and toss to coat.

3 Arrange florets in a single layer on baking sheet: Arrange the broccoli florets in a single layer on a baking sheet that has been rubbed with some olive oil or lined with parchment paper or aluminum foil.

4 Roast for 16-20 minutes: Roast at 425°F (220°C) for 16-20 minutes until cooked through (check by poking with a fork, should be fork tender) and lightly browned. The browned bits are the best! So don’t worry if you see some charring.

5 Toss with Parmesan and black pepper: Put the roasted broccoli back in the bowl and toss with lots of freshly ground black pepper and the grated parmesan cheese. Be generous with the black pepper, broccoli loves it!

Serve immediately.

Grilled Sweet Potatoes

Adapted from Simply Recipes

Serves 6

Ingredients:

4 large sweet potatoes

3-4 Tbsp olive oil

Kosher salt

Cilantro Lime Dressing:

1/4 cup finely chopped fresh cilantro

1 tsp lime zest

2 Tbsp fresh lime juice

1/3 cup olive oil

pinch of salt

Directions:

Preheat the oven to 375 degrees F. Bake the potatoes until they can be just pierced with a knife, about 45 minutes. Cut into large chunks or into lengthwise wedges.

Prepare the grill for medium hot heat.

Coat the sweet potatoes with olive oil and lightly sprinkle kosher salt.

Once the grill is hot, lay the sweet potatoes onto the grill grates.  Cover the grill and cook until each side has grill marks, between 3-6 minutes for each side, depending on how hot the grill.

Meanwhile make the cilantro dressing by combining all the dressing ingredients in a small bowl.

When sweet potatoes are grilled to your liking, toss them in a bowl with the dressing and serve immediately.

 

Homemade Applesauce

About 2 1/2 quarts, enough for Christmas dinner and leftovers!

Ingredients:

3 lb Granny Smith apples (6 to 8 apples) peeled, cored and cut into 8 slices.

3 lb Honey Crisp or Macintosh (6 to 8 apples) peeled, cored and cut into 8 slices

Zest and juice 2 large navel oranges

Zest and juice of 1 lemon

1/2 cup light brown sugar, packed

2 Tbsp.unsalted butter, optional to add richness

2 tsp. ground cinnamon

1/2 tsp. ground allspice

Directions:

Place the zest and juice of the oranges and lemon in a large bowl.  Toss the apple slices in the juice.  Pour the apples and juice into a non-reactive Dutch oven and add the brown sugar, butter, cinnamon and allspice and cover the pot.  Bake for 1 1/2 hours, or until all the apples are soft.  Mix with a whisk until smooth, or leave chunky as desired.  Serve warm or at room temperature.
