Pumpkin Cupcakes with Cream Cheese Frosting
24 cupcakes
Cupcakes:
- 2 cups sugar
 - 1 cup vegetable oil
 - 4 eggs
 - 2 cups flour
 - 1 Tbsp. pumpkin pie spice
 - 2 tsp. baking soda
 - 1 1/2 cups canned pumpkin
 
Method:  Oven 350 degrees F.
- In the large bowl of an electric mixer, combine sugar and oil; add eggs and continue beating.
 - Add the next 4 ingredients and mix well.
 - Pour batter into cupcake pan lined with cupcake papers.
 
Bake at 350 degrees for 25 to 30 minutes. Let cool completely before frosting.
Frosting:
- 8 ounces cream cheese, softened
 - 3 Tbsp. butter, softened
 - 2 tsp. vanilla
 - 2 1/2 – 3 cups sifted confectioners’ sugar
 
Method:
- In a bowl, blend cream cheese and butter.
 - Add vanilla and sugar and mix well.
 - Frost cooled cupcakes.
